Recipes From Around The World: Mexico

We’re bringing you some of our favourite recipes from around the world and here’s one for all the Mexican food lovers! Especially for those who love their spice and flavour. Want to learn how to make a simple Chicken Fajita recipe? Here’s how:

 

 

Ingredients:

  • 2 large chicken breasts, finely sliced
  • 1 red onion, finely sliced
  • 1 red pepper (or any other bell peppers), sliced
  • 1 red chilli, finely sliced (optional)

For the marinade:

  • 1 heaped tablespoon smoked paprika
  • 1 tablespoon ground coriander
  • A pinch of ground cumin
  • 2 medium garlic cloves, crushed
  • 4 tablespoons of olive oil
  • 1 lime, juiced

For serving:

  • 6 medium tortillas
  • Salad

Method:

  • STEP 1
    Mix smoked paprika, ground coriander, a pinch of ground cumin, crushed garlic cloves, olive oil, and lime juice together in a bowl with a big pinch each of salt and pepper.
  • STEP 2
    Stir the 2 finely sliced chicken breasts, finely sliced red onion, sliced red pepper and 1 finely sliced red chilli (optional) into the marinade.
  • STEP 3
    Heat a griddle pan until smoking hot and add the chicken and marinade to the pan.
  • STEP 4
    Keep everything moving over a high heat for about 5 mins using tongs until you get a nice charred effect. If your griddle pan is small you may need to do this in two batches.
  • STEP 5
    To check the chicken is cooked, find the thickest part and tear in half – if any part is still raw (light pink) cook until done. Chicken should be white inside when cooked.
  • STEP 6
    Put the tortillas in the oven or microwave to heat up and, wrap and serve with the cooked chicken, a bag of mixed salad.
  • You can also serve fries on the side with this!
